Roasted Chicken by Martha Stewart

Ingredients

1 six-pound roasting chicken
2 tablespoons unsalted butter
Salt and freshly ground black pepper
2 medium onions, peeled and sliced crosswise 1/2 inch thick
1 lemon
3 large cloves garlic, peeled
4 sprigs fresh thyme
1 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat

Directions

Let chicken and 1 tablespoon butter stand at room temperature for 30 minutes. Preheat oven to 425 degrees. Remove and discard the plastic pop-up timer from chicken if there is one. Remove the giblets and excess fat from the chicken cavity. Rinse chicken inside and out under cold running water. Dry chicken thoroughly with paper towels. Tuck the wing tips under the body. Sprinkle the cavity of the chicken liberally with salt and pepper, and set aside.
In the center of a heavy-duty roasting pan, place onion slices in two rows, touching. Place the palm of your hand on top of lemon and, pressing down, roll lemon back and forth several times. This softens the lemon and allows the juice to flow more freely. Pierce entire surface of lemon with a fork. Using the side of a large knife, gently press on garlic cloves to open slightly. Insert garlic cloves, thyme sprigs, and lemon into cavity. Place chicken in pan, on onion slices. Cut about 18 inches of kitchen twine, bring chicken legs forward, cross them, and tie together.
Spread the softened butter over entire surface of chicken, and sprinkle liberally with salt and pepper. Place in the oven, and roast until skin is deep golden brown and crisp and the juices run clear when pierced, about 1 1/2 hours. When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. The breast temperature should read 180 degrees and the thigh 190 degrees.
Remove chicken from oven, and transfer to a cutting board with a well. Let chicken stand 10 to 15 minutes so the juices settle. Meanwhile, pour the pan drippings into a shallow bowl or fat separator, and leave onions in the pan. Leave any brown baked-on bits in the bottom of the roasting pan, and remove and discard any blackened bits. Using a large spoon or fat separator, skim off and discard as much fat as possible. Pour the remaining drippings and the juices that have collected under the resting chicken back into the roasting pan. Place on the stove over medium-high heat to cook, about 1 minute. Add chicken stock, raise heat to high, and, using a wooden spoon, stir up and combine the brown bits with the stock until the liquid is reduced by half, about 4 minutes. Strain the gravy into a small bowl, pressing on onions to extract any liquid. Discard onions, and stir in the remaining tablespoon of cold butter until melted and incorporated. Untie the legs, and remove and discard garlic, thyme, and lemon. Carve, and serve gravy on the side.

6.    Organize a breakfast date, then simple it gets, the better. Breakfast as we all know is the most important meal of the day. You can start her day with  a fresh and a bright morning surprise that is full of love.
7.    A card is as simple as it is but could mean so much to your special someone.
8.    Since its Christmas and love is definitely in the air, why not bring her to very romantic and beautiful places near you.
9.    Use technology like creating a video presentation. It’s like doing the old days’ scrapbook, the only difference is that it is less expensive and an advantage to those people without the talent in arts and design.
10.   Any surprise bash is a weakness to either man or woman.

There are a lot of ways to do to surprise your special someone but always remember that any material things would never matter without the effort. It will always be the effort and the intentions that will count. Remember that a person doesn't love you for whatever you can or cannot give. Love can be tendered through actions.

Beginning in early December, the Geminid meteor shower grows in intensity to finally reach its zenith on the night of December 13 and continue overnight into

the early morning hours. The predicted peak is just after midnight on December 14, 2012.

The most reliable meteor shower of the year, the Geminids are characterized by their multi-colored display--65% being white, 26% yellow, and the remaining 9% blue, red and green. They come in at a moderate speed of 21.75 miles per second, therefore they are bright and often produce fireballs. They radiate point is near Gemini’s bright twins, Castor and Pollux.

TIP: Start watching the Geminids by 9 or 10 p.m. local time. The peak might be around 2 a.m. local time on these nights. Geminid shower, often producing 50-60 or more meteors per hour. (Applicable in all countries)

Batang Kondoktor

As we go along with our daily routine, we meet different people of different personalities, insights, beliefs, and way of living. As a normal human, comments are also normal and the negative ones are the usual.
Life is very unpredictable, we can never tell what's next and as we all know, ourselves can only tell what to do with what will happen next.

These are the common words that we usually hear from him. He is a 9 year old boy whom I use to call batang kondoktor. He is no longer studying. he smokes badly and he talks like a 25 year old man. He's playmates were his fellow kondoktors and jeepney drivers. Instead of climbing up the tree as his daily playing routine, he hangs over the metal bars at the back of the jeepney. instead of buying candies from the money he got, he buy rice and a can of sardines. The four corners of the jeepney have become hi classroom and the Mamang Driver have become his teacher. His tiny bone were really strong and his sickly looking physique are the opposite of his actions. His eyes seemed to be telling me the pains and dreams of this young man. I just realize how lucky I am for I use to eat at least three times a day without working for it.

Life that isn't fair



Each and every one of us has different problems to face each and everyday of our lives. And each and every one of us has our own ways to handle it. I once thought that I was one of the many people who has the biggest problems in this world until I knew a story on the other side of my avenue. 


His dad is an alcoholic guy. He use to hurt her and her mom when she was still young. Her elder brother is rebellious and wasted. Her younger brother is so sickly and her mother is an OFW in Italy. Her mom had to break up with his father and had to go to abroad to work for their living. They thought being apart and being battered by their father was the most painful of all until two years ago. The whole family got so emotional, shocked of what happened. Her mom was diagnosed of a LUPUS DISEASE. Lupus is a disease that is chronic meaning it does not go away. According to Wikipedia, the Immune system is made up of white blood cells in your body that fight off disease. Lupus makes these white blood cells think that the healthy cells of the body around them are diseased, so they end up attacking healthy parts of the body. So far, there is no know cure for this. even the origin of this disease remains unknown. This maybe the most painful of all her experiences in life but she remain strong for herself and for her brothers. She continue to live her life without letting, what might happen in the future, to stop her dream. She's now on her nearest way of success yet never stop believing. 

How does it feel to know that the only parent you have, your mom, is dying? How would you feel if you were in her situation, Your mom is sick and dying while she is far away home? Bear with me as I offer my everyday prayers for her and her family.
